Menu Plan Monday



O.K. so I didn't get my menu posted on Monday but it was made yesterday and already shopped for today.

Monday - leftovers

Tuesday - Creamy Italian Sausage Pasta (343 calories)

Wednesday - Chicken breasts stuffed with artichoke, lemon, and cheese (234 calories) with roasted asparagus

Thursday - Bakes ziti with garlic bread

Friday - Cheese enchiladas with Mexican rice


Just to throw out a few extra Lent meal ideas here's what we had last week but I didn't post.

Fusilli alla Caprese - this was super duper easy and really good - completely vegetarian

Shrimp and Wild Rice Casserole


These might be made in the coming weeks:
Shrimp Cakes with Peach Jalapeno Relish
Bakes Penne with Roasted Vegetables - also vegetarian and it makes a ton!
